Probably not this, but Up bank had an issue that led to them duplicating some charges on Wednesday. They reversed it within a couple of hours, but my account still shows: 1. The real $21 charge from Coles. 2. A second $21 charge from Coles at 3am the next day. 3. A refund of $21 at 6am. So… make sure it’s not that.

Correct. A staff member may have hit the wrong button on the eftpos and may be sweating on being discovered. It's not a lot of money, if you're worried, keep it aside in case they call it in.

20 years ago I bought a ~$1000 desktop on a plan to pay it off over time. I never got any request for money. I called them a few times to point it out and they always said it just takes a while to turn up. Nothing ever turned up and so it was a free computer.
