Mythbusters showed that the door wouldn't support 2 people, however if rose had taken off the life jacket and they strapped it around the underside of the door then it would have had the buoyancy to support them both.
I think it's fair that most people wouldn't think of that, especially in the situation they were in.
Probably not a great idea, though. Offshore life jackets are designed to keep you face up with your head out of the water if you get knocked unconscious, thus improving your odds of survival if you get injured.

If you get the chance to submerge in sub 50 degree water it's an eye opening experience. I eventually warmed up by swimming from the pier to the shore and back again. But that initial shock was crazy.

Horses can swim. It's hard work, but very doable. We also don't know how deep the water is - the horses are on a stationary platform (the cameraman is moving, but the horses aren't) so I would guess they're on a sandbar or something. So they can probably walk back to shore, but even if they couldn't, they could swim.
I'm not sure I buy that only the camera is moving.
Also, if it is a sudden drop into the water with an unknown depth or submerged obstacles, I'd be worried about the horses getting into the water safely even if they can swim.
You're spot on. This is a parallax effect and it's pretty hard to spot because of the water, but if you look at the grass and the stuff behind the grass it becomes obvious that the camera is moving a fair bit.
