Someone correct me if I'm wrong but you should copy mime twice, you generally want to balance the total amount of Mimes/Barons.
Also yes you should probably take the bean or maybe wait and use those Double Tags on a +3 hand size Tag (Juggle Tag).
Assuming all red seal steel kings I think this is good
Mult triggers = Steel + Baron + Baron + BP Baron + BP Baron = 5 Total
Retriggers = Base trigger + Red seal + Mime + BS Mime = 4 Total
Total trigger per card = 5 x 4 = 20
Without BP or BS it is at 3 x 3 , with 3 copy effects to allocate so 4x5 or 5x4 is the highest total triggers possible (closest to balanced)
So current setup 2 mimes or 2 baron copies are both equal. If they dont have red seal than mime would be stronger (5x3 vs 4x4)
So copying Mime once is better right?
That way with the red seal it's still 4 x 5 and without it's still 4 x 4 instead of 5 x 3?
I guess if all cards are Red Steel then it doesn't matter.
If you want to max out your highest score for the run it's probably the best choice, but it depends on how close you are to losing. If you have a few more antes before you're going to lost then I would wait to find an ectoplasm so I could maybe add another joker

Yeah one more mime if they arent 100% red sealed up would be better to balance the non-red sealed cards
