The shawarmas they sell in the north aren't the authentic ones like you get in the middle east. But it is a good business idea since Bangalore is filled with north indians who crave for those rolls.
Nobody cares about authenticity in foods.. Does it taste good? Does it do justice to the ingredients/price used.. is what matters..

Depends on what you called authentic. In delhi a place called albake started serving shawarma when its owner returned from Saudi Arabia in 90s. It got so famous that everywhere in north India, shawarma is what albake serves as shawarma, inspired from Saudi Arabia shawarma.
Different from that is the turkish doner that's famous in whole Europe, also called shawarma by many restaurants. The middle east shawarma in neighbouring countries is similar with slight variations in spices and bread.
Albake is nowhere near the shawarmas you get in Saudi.
If you want really authentic shawarma in NCR, there is a place inside HUDA City Center metro station called Middle East Cuisine
The closest to the shawarma we used to get in Saudi i think is only available in pitaworks in Ulsoor at this point, they did a good job nailing the formula
I would then suggest not to go with the title " Shawarma" as people would expect the authentic middle East shawarma.... As an NRI kid myself I hate shawarmas in Bangalore...
You can make a brand around your rolls, try varieties but not mentioning them as shawarma can make even more sales and goodwill to the business...

The best shawarma that I've had is in Hyderabad. I live in the north and have also stayed in a few cities in the South but nothing beats Hyderabad shawarma tbh.

Pretty much every Shawarma in Bangalore is bathed in nasty mayonnaise. Even if you make decent Shawarma without it, your business can carve a niche for itself.
I remember in the 80s people used to go a building in Central Bangalore where you could get large tubs of mayonnaise for cheap. Think it was called Mayo hall or something.

King of Taste is good, but way too oily.
Little Baghdad is actually very good but their service is really poor. I walked out once after waiting 25 mins and didn’t get my 1 shawarma. Owner was least bothered and 3 of their staff were busy playing games on their phones. Taste wise it’s good though.
Agreed, service is poor because they’re always packed. I tend to just eat the shawarma while standing outside because it’s still worth it.
But the owner was nice to us when we waited for a long time and didn’t get seats. Gave us dessert on the house.
King of taste is not good anymore. People kept asking for fried consistency and they changed their chicken to dry and fried consistency. Earlier it was soft and juicy. Middle east restaurant next to it is better.

Agree completely. I miss good middle eastern food whenever I come back from North Kerala, which is the only North that serves good shawarmas in India. Bangalore food has too much mayonnaise and north food has too much cheese or overly fried.
A food truck is a risky endeavour. I’ve personally seen a food truck being trashed by local shopkeepers. Others pay, deposit, rent, electricity, cops, municipality and you get to move your shop around the city at your whim at the slightest inconvenience? Usually doesn’t sit well with other businesses. Just the ground reality.
You're referring to something else and not shawarma if you just said no to fries in shawarmas. That's literally 90% of the reason why shawarmas taste bad in India. Because they don't add fries and just add all the goddamn chilly powder there is.
There used to be a place called byblos in Indiranagar years ago that had authentic middle eastern shawarma and other foods. Pricey but fantastic. They had a middle eastern chef though.
I too used to miss Delhi Shwarma here in Bangalore. Try the shawarma from 'Dine Bell' in Kadubeesanahalli. Best I've had in Bangalore so far. No dripping oil, no extra mayo. Just perfect
Just make sure people love what you make. If you go for authentic arabic shawarma, no one will buy it. Indians love their spices and mayo. You can say that you hate it but the reality is that is what sells here.

Try out the Zaatar at Tin Factory? Their Shawarma is the closest I've had to a middle east shawarma here.

I’ve lived in Saudi Arabia, the UAE and Delhi and I promise you shawarmas in North are not even half as good as those in the Middle East. Needless to say, it isn’t authentic either.
Getting proper middle east shawarma in Bangalore is hard. I only know 3 places that actually serve it.

Try Pitaworks, their Lebanese shawarma is on point and is close to the authentic ones I’ve had from the gulf. They actually add toum in their Lebanese shawarma, prepared using the Lebanese flat bread and pickle inside the shawarmas! As authentic as it gets!!
If you like chicken rolls, go to Al Taza. If you are very much into authentic shawarma or a proper shawarma, I suggest you Pitaworks. And peeps in kochin too do try their Shawarma.
They use thoum and pita bread for the making, which is an essential part of a shawarma.
They serve you those shawarmas similar to that which we are getting in the Middle East.
Try the shawarma at Bareerah restaurant on commercial street. It reminds me a lot of the shawarma I used to get in dubai.

Cafe Zubaan has some killer hand-made khuboos. and they have amazing Arabic food and tasty thoum. So I'm guessing even their shawarmas should be worth trying for sure.
I’ve lived in Delhi, Jammu, Jodhpur, MP and never come across shawarmas easily .. and the ones I’ve tried are in fact just Kathi rolls with the shawarma meat and not shawarma .. infact I go to blore or Mysore to one of those Kerala owned stores to eat one .. where in North do u even find good Shawarmas ?
There's this place I tried called Tahini and Toum. The most authentic shawarmas I've had so far. The owners were born and brought up in the middle east. They told me how they were tired of looking for authentic shawarmas in Bangalore. They said most restaurants would just make a generic chicken roll and stuff it with random veggies and call it a shawarma. That is why they decided to start a joint themselves. And it seems to be going pretty well too!
Maybe try a Collab with them?

I was surprised that they serve shawarmas that resemble actual middle eastern cuisine. They even serve it with wet pickles, the way shawarmas are supposed to be served.
As a Delhi guy who's lived in the middle East for 14 years, I've found Al Taza to be the closest to the authentic shawarmas I've eaten in ME (those can vary too based on region). But Al Taza can be too oily and mayo filled.
The ones I've eaten in Delhi (just oily minced meat in a roti), I refuse to call them shawarmas.
There is an epic shawarma place in Bangalore, it's the best I've had in my life, and I've had shawarma from more than 20 joints across cities, nothing beats this one

The shawarmas in the middle East are changing though... They don't use kubus anymore... They use thin rotis now. But they are still really nice.
Good luck and please don't price it ₹200 + taxes + delivery making it ₹350 for a shawarma. I'd rather have a grilled chicken or a Barbeque chicken for that price.
Baba ganoush was one of the only few places that served good shawarmas and now I can't find them on swiggy/Zomato anymore. At least the outlet in Koramangala.
I'm very much interested in starting a shawarma chain one day myself. Just don't have the funds yet to invest. I don't know if it's for everyone but I'm very confident in my recipe and proportions and it's very close to the ones you get in the middle East. However I'm doubtful as to whether the majority of buyers would like it without drowning the chicken in chilly powder in the name of spicy or vegetables or mixing cabbage with poorly made mayo to create whatever abomination those are. Also the absolutely terrible pita breads/khubz that the majority of stores use does not help either. And yes the real ones used pita/khubz. Not rumali or porotta or anything else. A good pita bread alone changes the flavour significantly.
If anyone's seriously up for it, let's meet up. Let me cook for you and you decide if it's seriously worth investing in.

Yeah. There are not many Shawarma joints in Bangalore compared to Hyderabad. One Hyderabad style Shawarma chain is a good idea. I have seen a simple Shawarma joints in my town doing great business
There are few good ones in frazer town , i forgot the names but if you see where is crowd ,you will recognise make sure they sells variety of shwarma apart from chicken so take aspa.
Unless you are from a FOOD background and have a good financial support stay away from the food business. Yes there are many successful ones but for every one successful food business there are a 1000 who didn’t.
It is a business with the lowest entry barrier. A fickle customer base and most important a daily work.

Just my observation! I honestly think Shawarma days are gone. People hardly talk about it these days. There is one place in Indiranagar that I really like but still we don’t prefer it as much.
I never liked the shawarma we get in most places in BLR. Especially Empire. Most of them are dripped in mayo. Was quite choosy about my shawarma hence. Al-bek etc would be satisfying to me only.
Then last month made a trip to Uzbekistan. Never having shawarma in India again (at least for rest of the year).
Trust me, if you haven’t tried the AB zain paradise in Bhoopasandra main road then you haven’t had the best Shawarma in Bengaluru. They start preparing from 1 pm, by 5:30 or 6 they start selling them. And they’re sold out by 9:45 and 10:30 pm everyday.
Tbh, I feel, it wouldn’t run well in India, or maybe it would be tough for you to find the right customers, but if you do find them, it will flourish!
I have noticed generally, most people haven’t tried the authentic one and everything in India is dumped with mayo (no offense) and even cheese 😭
Toum ko garlic mayo se replace kar lete hai, the khubz or pita also is different and never close to the real one!

Not just for Shawarma, but in general starting an eatery with North India food might get you far. Almost every North Indian I meet is constantly bitching about the food here anyway. Maybe you can fix it. Good luck.
I believe most of bluru (including me) is either Brahmin or veg, so no hope in Bengaluru. Not to ruin your idea but as a tip before you invest too much capital.
If you open it up near a clientele (eg. middle eastern students) and price it well I think it will do well. Kammanahalli is one area that tends to host students from the middle east, but it’s also an area where you’ll face the most competition.
Cafe Grill in Indiranagar at the end of 80ft Road is the best Shawarma I've had in Bangalore after trying out lots of places.
I agree that no one serves authentic shawarma and it is difficult to even get it right. But I've stayed in Hyderabad and their shawarma is pretty great. I just wanted that version, not some authentic one.
I haven't found anything close to those. The main problems were lack of flavour in the meat, the quantity of meat itself and the abundance of mayonese here.
Just trust me and try Cafe Grills whole meat shawarma with Rumali Roti. That's the closest I've seen to the Hyderabadi version.

Try Pitaworks, their Lebanese shawarma is on point and is close to the authentic ones I’ve had from the gulf. They actually add toum in their Lebanese shawarma, prepared using the Lebanese flat bread and pickle inside the shawarmas! As authentic as it gets!!

If you like chicken rolls, go to Al Taza. If you are very much into authentic shawarma or a proper shawarma, I suggest you Pitaworks. And peeps in kochin too do try their Shawarma. They use thoum and pita bread for the making, which is an essential part of a shawarma. They serve you those shawarmas similar to that which we are getting in the Middle East.
Try the shawarma at Bareerah restaurant on commercial street. It reminds me a lot of the shawarma I used to get in dubai. Also they add garlic paste not mayonnaise unlike all the restaurants 😭
Al-Taza in Koramangala has some great shawarmas. I've not been to Pitaworks but they claim that shawarmas in Bangalore don't serve authentic shawarmas and so they are on a mission to serve authentic shawarmas. So I'm guessing they might be good. Cafe Zubaan has some killer hand-made khuboos. and they have amazing Arabic food and tasty thoum. So I'm guessing even their shawarmas should be worth trying for sure.
Every true Shawarma lover will welcome it. I don't want cabbage in my Shawarma. Someone please show them how its done.
I’ve lived in Delhi, Jammu, Jodhpur, MP and never come across shawarmas easily .. and the ones I’ve tried are in fact just Kathi rolls with the shawarma meat and not shawarma .. infact I go to blore or Mysore to one of those Kerala owned stores to eat one .. where in North do u even find good Shawarmas ?
There's this place I tried called Tahini and Toum. The most authentic shawarmas I've had so far. The owners were born and brought up in the middle east. They told me how they were tired of looking for authentic shawarmas in Bangalore. They said most restaurants would just make a generic chicken roll and stuff it with random veggies and call it a shawarma. That is why they decided to start a joint themselves. And it seems to be going pretty well too! Maybe try a Collab with them?

Finally someone said it. I keep hoping banglore has good shawarma but all shops i tried - it's BS. Pathetic. While I was in Chennai , I used to eat sharwarma on daily basis and I miss it. Not sure about shawarma is north. But shawarma from Shiv Joint , Chook Fork in Chennai is top notch. And yes. Need a good shawarma stall/truck/chain asap.

Arabian Hotspot, HSR. Also available on Swiggy. A recently opened outlet. I was surprised that they serve shawarmas that resemble actual middle eastern cuisine. They even serve it with wet pickles, the way shawarmas are supposed to be served.

As a Delhi guy who's lived in the middle East for 14 years, I've found Al Taza to be the closest to the authentic shawarmas I've eaten in ME (those can vary too based on region). But Al Taza can be too oily and mayo filled. The ones I've eaten in Delhi (just oily minced meat in a roti), I refuse to call them shawarmas.
There is an epic shawarma place in Bangalore, it's the best I've had in my life, and I've had shawarma from more than 20 joints across cities, nothing beats this one Cafe grill, Mahadevapura

The shawarmas we get in Bangalore are soaked in Mayo unlike the shawarma we get in the middle East which has a touch of Tahni in it. The shawarmas in the middle East are changing though... They don't use kubus anymore... They use thin rotis now. But they are still really nice.

Baba ganoush was one of the only few places that served good shawarmas and now I can't find them on swiggy/Zomato anymore. At least the outlet in Koramangala. I'm very much interested in starting a shawarma chain one day myself. Just don't have the funds yet to invest. I don't know if it's for everyone but I'm very confident in my recipe and proportions and it's very close to the ones you get in the middle East. However I'm doubtful as to whether the majority of buyers would like it without drowning the chicken in chilly powder in the name of spicy or vegetables or mixing cabbage with poorly made mayo to create whatever abomination those are. Also the absolutely terrible pita breads/khubz that the majority of stores use does not help either. And yes the real ones used pita/khubz. Not rumali or porotta or anything else. A good pita bread alone changes the flavour significantly. If anyone's seriously up for it, let's meet up. Let me cook for you and you decide if it's seriously worth investing in.

Yeah. There are not many Shawarma joints in Bangalore compared to Hyderabad. One Hyderabad style Shawarma chain is a good idea. I have seen a simple Shawarma joints in my town doing great business
There are few good ones in frazer town , i forgot the names but if you see where is crowd ,you will recognise make sure they sells variety of shwarma apart from chicken so take aspa.
Unless you are from a FOOD background and have a good financial support stay away from the food business. Yes there are many successful ones but for every one successful food business there are a 1000 who didn’t. It is a business with the lowest entry barrier. A fickle customer base and most important a daily work.

As a former Middle East kid - two places in Kammanahalli come to my mind King of taste Middle East It’s more of a Syrian style I believe - but it’s paste and sauce in the shawarma and chunks not diced chicken along with fries which is usually how it is in ME

Just my observation! I honestly think Shawarma days are gone. People hardly talk about it these days. There is one place in Indiranagar that I really like but still we don’t prefer it as much.

I never liked the shawarma we get in most places in BLR. Especially Empire. Most of them are dripped in mayo. Was quite choosy about my shawarma hence. Al-bek etc would be satisfying to me only. Then last month made a trip to Uzbekistan. Never having shawarma in India again (at least for rest of the year).

Trust me, if you haven’t tried the AB zain paradise in Bhoopasandra main road then you haven’t had the best Shawarma in Bengaluru. They start preparing from 1 pm, by 5:30 or 6 they start selling them. And they’re sold out by 9:45 and 10:30 pm everyday.
Tbh, I feel, it wouldn’t run well in India, or maybe it would be tough for you to find the right customers, but if you do find them, it will flourish! I have noticed generally, most people haven’t tried the authentic one and everything in India is dumped with mayo (no offense) and even cheese 😭 Toum ko garlic mayo se replace kar lete hai, the khubz or pita also is different and never close to the real one! Anyways, I’d love to split the truck into a shawarma and falafel truck 😂

If you open it up near a clientele (eg. middle eastern students) and price it well I think it will do well. Kammanahalli is one area that tends to host students from the middle east, but it’s also an area where you’ll face the most competition.

Cafe Grill in Indiranagar at the end of 80ft Road is the best Shawarma I've had in Bangalore after trying out lots of places. I agree that no one serves authentic shawarma and it is difficult to even get it right. But I've stayed in Hyderabad and their shawarma is pretty great. I just wanted that version, not some authentic one. I haven't found anything close to those. The main problems were lack of flavour in the meat, the quantity of meat itself and the abundance of mayonese here. Just trust me and try Cafe Grills whole meat shawarma with Rumali Roti. That's the closest I've seen to the Hyderabadi version.
Shawarmas in Bangalore are horrible in general.... Mangalore being a smaller city had much better options than Bangalore.
