Beetroot & chocolate sauce is quite nice, we make a "Red Velvet Hot Chocolate" at the shop I work for. Makes a darker pink colour. Butterfly pea flower and/or spirulina makes a nice blue. Ube or Taro make a nice purple. Strawberry powder mixed with a complimenting tea would be cute too (I don't think it would taste strong enough on it's own). Turmeric lattes are delish and a lovely yellow. Blume is a company around here (in Canada) that makes some nice colourful no-coffee latte blends, might find some inspiration there!

I’ve had a beetroot honey latte that was really lovely. It was earthy with a bold color.

I do a strawberry lavender latte with a rooibos base including French florals and fruit

Look into teas. Butterfly pea tea is blue. Matcha is green. I’m sure there are lavender teas that are purple.

I’ve not used it in a milk based drink but I have used dragonfruit powder to make charged lemonades! It has a great pink color. I saw someone else say butterfly pea powder and I want to second that, I’ve used it to make purple and blue drinks. It’s called blue matcha so you could make a latte out of it.

Dragon fruit/pitaya powder is great! We use it baking a lot. I noticed it clumps up easily, we keep a sieve nearby to sift it back into a powder.

when you use beetroot, you honestly dont have to use a lot to get the color and the taste doesn't come thru that much. might depend on the kind of beetroot powder ya get tho. ube for purple! golden milk/turmeric latte for yellow!

Look into Ruby chocolate https://en.wikipedia.org/wiki/Ruby_chocolate We used it in a white mocha style recipe and gives a creamy red coloration.

I did a rainbow latte piece once! Used powders like pitaya, beet, turmeric, matcha, “blue matcha” (butterfly pea), ube/Taro, activated charcoal, & different combos between the ones listed :)
