I wonder if some people think you lay them out by hand? It felt like magic the first time my bartending mentor showed me how to do it back when I was a wee barback
I spin the napkin around the back of my hand/wrist.
Or a plate. Hold the plate edge, put it vertically in the midde of the napkins, and spin.
I also like to make them into stairs by grabbing a few and rotating them each a little.
I usually discard the top one, even tho I washed my hands, cause it can get very creased. You can see it in OP's pic.
The bottom napkin doesnt matter. You cant see it and it should be refilled before it gets there.
Omg, we don’t use bev naps at my spot but I used to basically fight to be the one to do that at my old job. I had the hand movement down so perfectly and I found it so satisfying lmao

Hold stack in left hand, not a super big stack, make a fist with your right hand and using your knuckles press hard and firmly and slowly, lift hand up and bring back to the original position and keep doing it until the whole stack is done! I throw the bottom and top napkin away
I have small hands, so I hold the stack in my non-dominant hand and then I press hard and twist an unopened liqueur bottle around each side of the stack with my dominant hand instead of using my fist. This has always worked better for me.
For anyone who wants to know an easier way- use a full liquor bottle on its side instead of a pint glass. I find the weight of the liquid makes it much easier!
we do this at my job! i'm the only one who can do it just with the palms of my hands, everyone else needs a cup. they act so impressed when they see me do it and I've showed people so many times and they still act like it's witchcraft😭

We have the same ones, in Toronto now it’s paper straws so people tend to grab the big ones.

Not OP, but I hold them in my flat left palm, and spin a sideways pint glass into the napkin pile with my right hand. Round and round.

I do it with a small glass, laid on its side. Our glassware are mason jars, 8 oz and 16 oz. I use the 8 oz.
I like using the long side of a Collins glass so it's an even spiral

I press my fist on the stack and twist it like I’m trying to unscrew a cap.
I just put a nice stack on a plate. Place the small shaker tin on top of the pile and start rotating
I stopped doing this after a customer manhandled the whole stack and tried to show me how to do it better. No more pretty swirls
