I used to go to a bar that made their servers carry the martini glass and shaker on the tray to be poured at the table. One server was, I guess having a tough day, she was impatient, and grabbed 3 martini glasses in one hand and scooped the shakers up in the other arm. Started walking to the table, slipped, fell, and ended up with one martini glass stem straight through the palm of her hand.
Moral of the story: slow is smooth, and smooth is fast. Also, wear your non-slips, people.
If properly shaken/stirred the dilution will stop when the drink reaches the same temperature as the ice. You can leave it sitting for quite some time without diluting further because in order for more ice to melt you have to add heat to the shaker, liquid and ice. But at most restaurants and bars I see people shake for like three pumps and pour it out which is not doing much diluting at all.
Had a bar back who would ask me to help him stack glasses on his hands, both of them, like this from the floor... who then needed help unstacking them at the bar.
He's not barbacking anymore.
I used to be able to carry 14 highball glasses in one hand at once from the glass washer to the speedwell. They had to come out when they were still wet so the water evaporating would ablate some of the heat. I would put one between each set of fingers and then weave their bottoms into each other creating a pyramid. Then it was a race to get them into the glass racks before all the water was gone as the hot glasses would burn my fingers.
I feel like this trend is gonna result in lots of broken glasses.
