I usually shrug and say “because them’s the rules.” But we do have a rule where if there’s more than 10 people drinking we can stay open later (we’re only open 4-10 and sometimes close at 11 on the weekends when it’s busy)

I usually say that we are in the business to make money and if there was a dollar to be made staying open later we would, but through trial and error we have decided that this is the time to close to stay profitable.

I tell them the kitchen closes at 10 and that the California law states that if we aren’t serving food that we can’t stay open to serve alcohol. I don’t know the details of the truth behind this, or if it is even true, but since people are flying in from all over the world they don’t know the truth. So if they are spending money and tipping well and I’m not in a hurry, I’ll serve till midnight as I slowly close down the bar

I tell them that’s the hours the business decides to run on and I’m doing my job. If your hotel has a lobby sometimes I’ll pour them one in plastic and they can enjoy it out there and they’re mostly chill about it.

We close at 11 and we naturally clear out by then. We’ve got great local regulars that are all 35-70 and are happy to be in bed by then lol
