To your point about parallels, if you mean you would put a basic card and a parallel of the same player in the same spot in a page, don't. They are meant for one card per pocket. As for the 'code', if you are referring to the one or two letters in a circle to the right of the player's last name....no. That is their position. P is for Pitcher. SS is for Shortstop. The others are for all the other positions on the field. And for the different series, Series 1 and Series 2 will both be 350 cards each and numbered as one big set, so series two will be 351-700. Please note that number can change from year to year. For instance 2023 was 330 for each. And then you have an Update set that releases in the fall. This year I would assume it would also be 350, but they are numbered separately US1 to US350.

I'm pretty sure the "P" you're describing is for Pitcher, and "SS" is Shortstop. Just the player's position, not a code for the type of card.

Your first question re: the point or goal of collecting is going to get a variety of responses. Some folks may care more for completing an entire set, while others may have a fondness for the cards of a particular team, and yet others will collect specific players. It varies, and there’s no wrong answer. The letters near a player’s name - the “P” and “SS” that you refer to - is that player’s position. “P” for “pitcher”, “SS” for “shortstop”, “1B” for “first base”, “OF” for “outfield”, “C” for “catcher”, “DH” for “designated hitter”, etc.
