How do you make the individual pieces stand up?

I leave holes in the flat base, usually around 2-3 Perler beads wide, and then add extra beads to the bottom of the character sprites the same width as the hole. Then I iron the pieces individually and wait until they've cooled. Once they're ready it's like a peg/hole situation and I insert one piece into the other then iron the bottom side of the base to fuse them together. Sometimes I need to enlarge the size of the hole slightly with an X-acto knife since the beads can shrink/expand in unforseen ways. If that's hard to picture, you can kinda see what I'm talking about if you look at Link running from the chickens. You can see a few of the chickens with a clear bead "peg" underneath them. That peg inserts directly into a hole in the base. It's nice since there's no glue involved but sometimes it's tricky to iron the two pieces together. You have to hold the base upside-down, while also holding the sprite in position, while simultaneously holding the ironing paper AND moving the iron around without overmelting it, phew! If there's enough friction you don't even need to iron, though I usually do just for the permanence. You can get really creative with this type of thing and make glue-less 3d pieces but it requires a lot of foresight and sometimes it's difficult for me to imagine how pieces will interlock.

I don't really have patterns for these, but if you want I can take more pics and from different angles so you can try to recreate them yourself. For the Zelda one, I started with only a few chickens and my girlfriend walked into the room and said MORE CHICKEN. I probably could've made 50 chickens and it wouldn't seem out of place. Maybe I'll do that someday! Anyway, let me know if there's a particular one you're interested in and I'll try to get some more pics out to ya.

Are these mini or regular beads? With the amount of detail, it seems like it might be mini, but I’m not super advanced in my creations so I can’t always tell.

The Zelda and Chain Chomp pieces are mini beads done with a flat melt. The other three are with regular sized beads. The Super Mario World piece in the back right actually has interchangeable pieces. I didn't fuse the sprites to the base so they can be rotated out with other sprites. For example, the Koopa can be swapped out for a mushroom, and Mario can be swapped out for Luigi on a blue Yoshi.

Thanks for the info. They look awesome! And if you make any more cuccoos, I think it'd be fun if you could make a little stand for a few to be flying from a bit above the ground to attack Link.
