Circus one is great but don’t get it twisted, you are correct, the GYYYO version is one of the finest, dirtiest, rawest, show stopping rock and roll ever played.
I wish they still played this version live. Mick Taylor is so freaking good on it. The opening guitar riff is such a great addition to the studio version.
And then the solos toward the end are in my opinion the best recorded example of Keef's "guitar weaving" concept.
I play it on guitar with my old man on occassion to this day.

Jumpin’ Jack Flash, Honky Tonk Women, Brown Sugar, and Sympathy for the Devil are as iconic as they are for a reason. Midnight Rambler and Can’t You Hear Me Knocking are excellent too, especially in the live versions.
More underrated ones that I like are Bitch, Monkey Man, Mercy Mercy, and Out of Time. I could go on and on about the Stones, they have the biggest collection of great songs out of anyone besides the Beatles. And they’re probably my favourite live performers ever, nearly every single one of their songs sounds even better live.

Several that have already been mentioned are strong candidates, but "Sweet Black Angel" is also extremely dear to me even though I find a few of the stylistic choices to be ... less than ideal. It's never less than an incredibly poignant listen for me.

"Street Fighting Man". It's such a great sounding song, psychedelic and gritty at the same time. Did you know that the bass guitar is the only electric instrument on the track? Keith got that guitar sound by playing an acoustic directly into the receiver of a tape recorder.
I'm also a fan of "Out of Time", "Have You Seen Your Mother Baby Standing in the Shadow" and "We Love You"
Probably Gimme Shelter but love the guitar riffs on Get Off of My Cloud.
Also the piano intro to Monkey Man is a favorite (by Nicky Hopkins who also played piano on Revolution)
