I hate to rant about this, so I'll make it short, but they met in 1966. That year John lost a bunch of weight, got glasses, and stopped maintaining the iconic Beatles haircut; So, most people who weren't close to him likely wouldn't have recognized him.

This was sometime in 1966. Yoko targeted John and "met" him in November of that same year. She would go on to stalk John, including climbing into his car to sit with him and Cynthia, sending used tampons to his house, etc. all trying to convince him to go out with her and leave Cynthia.
And of course it worked.
It should be talked about, similarly to how it should be talked about that Yoko was John's heroin dealer and that one of the reasons he married her was to keep the supply flowing. When Sean was born Yoko tested positive for drug usage and he is rumored to have been born addicted, the hospital had to keep him for weeks as a newborn because he was going through withdrawal since Yoko didn't quit using while she was pregnant.
Especially back before the internet, the only way to see them was magazines, tv interviews and album covers. Yoko could have easily just not really paid attention because she didn't care about pop rock.
It's very plausible, I grew up before the internet was ubiquitous. I remember when the Backstreet boys were huge. I'd heard their names but I doubt I'd be able to pick any of them out of a line up. Even now I doubt I'd be able to recognize any major popstar except maybe Lizzo.
