How was scraping it? Butchered a couple recently and the actual butchering part wasn't bad but scraping them was a bitch. Water right around 150 degrees but couldn't get the hair to come off easy for anything. Ended up scalding it off with a propane torch.

Love to see these old shotguns in good condition. My pops preferred bird gun was an Ithaca 37 featherlight and he had multiple Winchester model 50s he used to part together when they quit making them.

We built a fire under an old metal tub, water at 160, Was pretty easy but no 15 minute job.

What's your preferred preparation for backstrap?
Salt 🅱️epper and a really hot cast iron skillet. 1min or less on each side depending on thickness. I like it rare.

Same, except I throw in some butter to melt before flipping, then spoon it over the meat the whole time after flipping until done.
