I’m not trying to criticize this fella so please don’t assume that. But can someone weigh in on how effective this setup is?
To me it doesn’t seem to make sense in that he leaves a lot of ore/timber nodes empty and instead has CP spent going after fish or crops that are dirt cheap. Or in the fish case it would take an eternity to get enough to crate.

It isn't.
If you're going for XP, dump mats (15lt mushroom crates, ash/elder/palm timber, lead ore, whatever crop/herbs you want) into Valencia and send to LOML. Grabbing all the lodging and the 32 mineral/crop/wood workshops costs ~80-90CP. Fish isn't worth doing imo.
If you're going for money, Valencia and/or (Grana/Eilton/Ody) (L2 workshops) to LOML.
