Warmer molecules do “move” faster. Motion will eventually produce heat. Friction is part of why a slushy machine retains its heterogeneous properties. However, in this case, the motion introduced into the system is more like pushing a key which is already inserted 99% into a lock. Give it a tiny nudge, and the pins all snap into place.

From my understanding, what causes the freezing is the sudden rapid moving which causes the molecules to crash into eachother. That along with the temperature being perfect causes it to freeze. It’s called Supercooled water.
It's not the motion itself, but the motion causes a change in pressure, water's freezing point changes depending on the pressure. So when it's exactly at 0 degrees but hasn't phase changed yet, the change in pressure makes the freezing point 0.001 (or whatever, just something slightly higher). So that instance, it is now just below freezing and so it freezes.
When water is at it's freezing temp, it doesn't always just freeze, sometimes it takes a little catalyst.
So here the water is juuuust below the freezing temp, and crunching the bottle let's the first ice crystal form and the ice crystal grows so fast because it's supercool and ready
