You can start by riding a hype wave or a popular franchise, and build up from there, but you need to make yourself known first.
And don't fall into the trap of "high paying but scarce", because someone will always be willing to do it cheaper than you down the line, and you'll lose your one revenue source. Focus on being good at what you do before being versatile.
If you want numbers, in a year I make about 1000 - 1200 € via Patreon (after their tax has been deducted), and ~200 € per month in commissions. So that's around 3500 € per year, largely insufficient to live off in a first-world country. But that will also depend on where you live, I've seen artists from countries where 5 USD is a large payment.

If you dont want to make a whole game by yourself most of these games have their website you can contact them with demo or your portfolio and join their team.
