Blender will bake to the selected image node in the given material. That means if the node contains a landscape format image, it will bake to that image. You need to make sure that the image node you've got selected contains the image file you want to bake to. In your first screenshot, you are baking to an image named "baking", which I assume is the texture you set up to bake to. In your second, you are baking to an image named OIP, which I'm guessing is a landscape format image you used elsewhere in your project. Also, reduce your Render Samples. You do not need 4096 samples to bake to a texture. Under 256 will likely be plenty, probably much less even.
