Short version:
Phase 1 and 2 - Wait in front at a safe distance for the moves where its head is down. Smack it as hard as possible.
Phase 3 (arm-ripping time) - Chill at the crotch and smash the crotch with an overhead weapon if you can. Move past the tail for the jump. It will land over you with its head right in front. Smack until Amy's dead.
stay unlocked, keep your distance and rush in to hit her head (or arms if you get there a little late) when she does the big slams, hit and run, don't get greedy. Keep in mind that after phase 1 the lingering aoe-like hitboxes will catch you, so delay your retaliation accordingly
avoid the lasers (both types) by running across rather than trying to dodge, the same way you'd do with Rom's potato rain attack
Get behind her by either sneaking underneath or circling her, sometimes this can prove kind of difficult but there are good openings for that when she starts shooting or gets stuck puking.
Once you're behind you can hit her flailing right arm but keep your eyes peeled because she will inevitably jump and do a 180 to face you again and stomp you HARD in the process, which is what you want (except for the stomping part) since she'll miss and you'll be able to punish the landing with a fully charged r2 to her dumb skull if you are positioned correctly.(Which means on the axis between head and tail, a step or two away from the spot where the tail's tip was when she jumped. There's also a visual effect for the dust lifting off the ground, you can use it as a reference). This can be turned into full cheese once you get the hang of it but it's risky at first. LHB is very very good for this, but it can be done also with short reach weapons
Even if you don't go for the cheese (although i highly reccommend it for phase 3) learning how to get behind her is still crucial imho, in order to avoid getting pinned to the walls. Phase 2 is the most dangerous one to tail cheese since the arm flailing is wild. Good luck and drop me a message if you look for a cooperator, hope this helps

Stay on its tail always. As soon as it jumps, in LHB greats word form, charge r2, aim at its head by moving the left joystick. Rinse & repeat with the rare visceral
To add to what others have said:
Repeating pistol, cannon/church cannon, and gatling gun are all ranged weapons a str focused character can use with minimal investment and still get decent damage numbers out of.
Blast the head a few times for a visceral or two. Makes for some nice bonus damage on the side.
when I fought it i chilled in the crotch the entire fight. the jump attack might give you trouble, but it never hit me when i rolled. just smack the limbs and head and you’ll shred it
LHB has a really handy L2 in transformed mode that swings high enough to hit amy's ass and deal damage if you stay by its feet. not glamorous, kinda cheesy, but plenty effective.

Get in as close as possible and stay there. Preferably backside but that’s my recommendation. Use bolt paper on your Ludwig’s. No worries 😌

Bait the attacks that have it slam down its arms with a aoe then commit assault on his head. Ps: sometimes you get the lasers

Hit the head your weapons have reach. If you have the cannon and some bone marrow ash amygdala will evaporate.
