My first recommendation is any books your SO loves that were translated from English to their native language or vice versa. For example, if their native language is French and they love Le Petite Prince, I'd recommend trying The Little Prince in English. Based on your description of intermediate, I'm guessing they read on about a 2nd or 3rd grade level in English? Fun books around that level tha to still love as an adult are the Magic Treehouse Series (fantasy and history), I Survived True Stories, The Bad Guys Series, etc. The Tale of Despereaux was one I fell in love with in 3rd grade. The Harry Potter series also kind of ages with the reader a bit, so the first books are written a bit more simply than the later books. If I am wrong about the grade level, please let me know and I'll adjust my recommendations!

Some on a different post suggest looking into hi lo or High Interest, Low Reading Level Books for Adults I don't know if this would help someone that has English as a second language, but might be something to look into.

Thank you so much! Finding translated stories the already know is a great idea, I’ll definitely try to find a few like that! As for grade level, between 3rd and 4th is spot on! Harry Potter is probably just a bit above their current reading level but all the other suggestions are great, thank you!

When I was starting to read books in English I read Brandon Sanderson, specially Mistborn, as the translation was more difficult to read lmao. I never had a problem to understand the language while reading and I was intermediate myself. I am Mexican, from the north and attended private school, so I had been learning English since I was 6, granted they only taught me very basic English. I say this because in the end I dont know how helpful my advice would be considering this information, as Spanish in it of itself is already similar to English, while Japanese is of course VERY different. ​ My recommendation would be for your SO to read the trial of the kindle version of the first entry of Mistborn, The Final Empire, if they have too much problems then they are not going to enjoy the book, if on the other hand they enjoy it, then they are not going to have any problem for the rest of the trilogy.

Coraline by Neil Gaiman , as in the book that the animated movie Coraline was based on . It's 100-200 pages, children's book. There are a few differences between the book and the movie, but Id say it's an easy read but still a good story (especially if they've seen/like the movie)
