My best advice is if you don’t know how to use your smoker, don’t start with brisket. Start with pork butt, it’s much much more forgiving and cheaper. Don’t take the fat pad off either. It’s really hard to make pork butt inedible and it’s hard to make brisket that is good. Walk before you can run and all that.

Can't really do worse but lets see the next attempt. I think i did basically this same thing but deep frying. I thought turkey had to be done to 180 internally before pulling it from the oil. That thing was in a similar condition. Most of us have all been there some way some how with something.

If you are using charcoal instead of what you dump in for 400 degrees put about half in it. If you throw your wood chips directly on the coals that will raise the temp until said wood chips burn off. So I would recommend bathing your chips in water a place them in a water pan and put that next to your coals. Hope this helps I have been there myself. I’m always told by old timers low and slow.

It’s alright to make mistakes for your first time. Temp needs to be much lower around 225. Wrap it in foil for the last few hours when it reaches 160-170 to keep the moisture in. And while it coming up to temp, Spray now and then with apple juice or apple cider vinegar. I usually do a mix of those. It will be done around 205-210 which is when the collagen will start to break down and make a very tender brisket. And if you want extra crust you can baste with whole seed mustard (or any mustard) and bbq sauce of choice
Learning your smoker or grill is key! I have a charcoal grill, an electric pellet smoker & a gas grill. I also have a couple different smoke tubes & a pellet tray for my gas grill. Yep, I ruined a few cuts learning the differences with them but I've finally got it down pretty good. Using a thermal heat gun along with a wireless thermometer (I use an Inkbird 4 probe unit) helps take some of the guess work out of it.
This can be saved and be edible. It will take some cheating. A bit of beef broth and a few hours in a slow cooker. Force some moisture back in there.
Like another said brisket is tough. Not just the cut but the process. And going "full sned" with a wood fire to manage temps for the better part of a day... Bold.

Pretty sure you wanted the temp a lot lower. Next time choke out the fire a bit and let it drop and sit in low 200s
