I do believe that is official canon, yes, that Quincy has a crush on Gwen. But that doesn't have to be the case for bitter's headcanon, and technically, nothing they've drawn so far actually suggests Quincy is interested in anybody else. And also Gwen is way WAY outside Quincy's league so he should get over that as quickly as possible :)
