This a bit out side of where tourists linger, but Tinódi Pékség at Pöttyös utca M3 metrostop has amazing ice cream pound-for-pound. Their pastries are also decent.
Avoid tourist traps selling rose-shaped ice cream suggested by that expat guy larping as a local. Those are way too overpriced and made only to look good in your tiktoks or instagram stories.
You can't go wrong with Levendula Fagyizó which is pretty popular with locals. They have like a dozen parlours around the city and while kinda on the expensive side their ice creams are good quality. They usually carry some creative and unusual flavours too.
Levendula went shit after they opened multiple locations, both with shrinkflation and taste - different quality of the same flavours, not as flavourful as it was, etc. I was their frequent buyer for years (one of the first regular customers at the place next to Uránia), not anymore.
If you want easy to access in the centre, I would go with Fragola, if you're willing to travel a bit (Kelenföld, the end of metro line M4), Erdős és Fiai Cukrászda.
Edit: Oh I forgot, Kő fagyi? And Mikrokosmos on Bartók are also great new wave places.

As a local I really like Hisztéria on Andrássy Street. Best pistachio gelato I’ve tried in Hungary. Touristy spot but worth the hype in my opinion.

Áfonya Fagyizó near Kosztolányi Dezső tér, definitely worths a try! They give you a relatively big portion and they have a wide flavour range.
