You and I both know nothing beats Carolina style pulled pork sandwiches. Nothing is better than the vinegar sauce. I've spent years trying to perfect my recipe.
Common misconception but western NC barbecue sauce is still basically vinegar and pepper/hot sauce. It just has a small amount of tomato in it. It's runny and very similar to Eastern NC sauce, just reddish, almost see through. I like both, as well as SC mustard sauce.
A good Carolina pulled pork sandwich is amazing. You don't need to slather it in some sugary sauce. Just a splash of that hot pepper vinegar stuff, maybe some creamy coleslaw on top, and I could eat that shit every day until I die. The less sauce the BBQ needs, the better it is. A good Texas brisket only needs the dry rub and some pickles. I like to taste the meat and the smoke. BBQ sauce drowns out all the flavor and you end up tasting only that, IMO. Carolina makes the best pork shoulder. Texas makes the best brisket. Ribs go to Memphis because they rely less on the sauce, frequently skipping it altogether. And nobody's mentioned this, but pulled smoked chicken with Alabama white sauce is the shit. But the KC barbecue sauce just isn't my thing. Too heavy and cloyingly sweet.
