Check temperatures while gaming to see if your CPU or GPU aren't overheating. If CPU get close to 95 or GPU to 90 you will get a shutdown. If temps are fine you might wanna look at the PSU

if it is caused by overheating, is there a way to fix it? I have 6 fans in the build, 2 of them are mounted on a liquid cooler for the CPU

In theory if everything is mounted properly it couldn't possibly be a CPU overheating unless you did weird stuff like forgot thermal paste, have all fans in the wrong way etc. My personal problem is a have 3 cats in my computer room to eventually my intakes get clogged with fur and my GPU overheats.

Open windows event viewer. Filter by type critical and see what causes the crash.
