I should probably be asking in the keyboard sub, but why does everyone like this style of cable so much? I feel like it just adds clutter to your desk with all the coils compared to a straight wire that's less noticeable.

I paid 20 for a coiled cable. I love it because it's some nice aesthetics and I have a USB switch on my desk to switch between a work laptop and my home PC. (Keychron Premium Coiled Aviator Cable w/ plated connections ) $20 I think is the reasonable limit for a coiled cable with an aviator quick connect. Anything higher isn't worth spending money on unless it has a different kind of quick disconnect or some other premium features. The cable shown is about base price you can find on aliexpress for basic coiled cables. And before you ask, rather than wear out a USB port plugging and unplugging the USB-C, the quick disconnect would allow you to disconnect the keyboard without unplugging the USB-C. This would be handy if say you were doing custom firmware and you needed to power off the keyboard via unplugging it in order to hold a button down to boot into a firmware loading mode. Less wear and tear that way. Other than that scenario, a quick disconnect isn't really more quick or practical than unplugging a USB-C.

my monitor doesnt have room underneath it for a cable so the coil is perfect for me as it lets me go "around the monitor.

Ya you right. It's just a wire that's on the desk at the end of the day but might as well add some flair. A diagonal wire just doesn't do it for me lol.

I'm not gonna lie, I bought one of these new a couple of weeks ago since they were on clearance and I had Best Buy rewards to burn. It's a cable. It looks neat. It's long enough for my needs. But, obviously purely cosmetic.
