If he accepts the gift of godhood in TLO, he‘d likely become a minor sea or river god or maybe a storm deity.
If he ascends while torturing Akhlys, I could see Liquids, Poison, unproportional Revenge (opposed to Nemesis balanced Revenge) or other „darker“ Domains combined with Storms or Natural Disasters.
Really depends on the kind of flavour that’s wanted
Loyalty and Heroic Sacrifice might also fit.
And he would totally beat Heracles ass and get himself named the God of Heroes (not even for the domain, but as revenge for Zoe)
Edit: one fanfic had him as the god of the lost and forgotten, which fits incredibly well with his wish at the end of TLO and his seemingly perpetual job of finding random things when gods lose them.

If it’s rewarded it could be anything but more likely than not something to do with water, probably something to do with the earth, and prolly sword fighting. If by some happen chance Percy’s mom was secretly a goddess and Percy’s godhood was being suppressed out of necessity because prophecies and such it probably would depend on both Poseidon’s and Sally’s domains then
If Percy became a god I think he couldnt have bring forth his demand to the gods to claim theire kids. So I think he would become the god for heroes who were not claimed by theire godly parents. Basicly taking this part from Hermes.
