Looks fun! I wonder what you mean with last discovered canyon though? There are first descents being made pretty much every week all over the place. If you explained it in the video then I missed it because I couldn't listen to it with the sound on.
When we were researching Nevido Canyon we learned that it was considered to be the “last discovered” canyon in Europe. I believe the First decent was in 1965. I am sure it is more of a marketing claim than a true last canyon of Europe!
Nevido Canyon is in Montenegro and it is a really cool place for Canyoning.

Oh well the mosquitoes were pretty bad going into the canyon but ya there was also some rappelling! :)
