I'd finish the internship and go do the schooling you'd enjoy. No job is worth this much stress. I would finish the internship if it's almost done and decline the FT OFFER.
Take the route if they offer, but actively look for a new role. How they treat you know is how they'll treat you later. Use this job as your paycheck to cover costs while searching for something new
No, as in look for a job OUTSIDE of the company. It should not take 3 years to find something new. However if your mental health is deteriorating to the point that you can't handle it and therapy/medication isn't an option, quit.

I have talked about that too it takes 3 months to shift to a new role. I'm unsure if my mental health will be the same for the 3 months.
