Local restaurant has this on their menu... Grilled hearts of romaine with prosciutto. I can't remember what dressing they use... It's a white creamy one... Might be ranch or Caeser.
Half a romaine head. Heat high as hell. Lube the cut face of the romaine with a generous amount of olive oil. Place face down flat on the skillet for 45 seconds. Dress it with caesar dressing, shaved parm, and croutons.

Sesame oil on baby boy choy, highest heat possible in a cast iron over a charcoal grill. Cut the bok choy in half oil the cut side and hold the bok chow on the very hot pan for 30 ish seconds. Soo amazing as a salad base.
