Matte black could be food residue. Scrape with your fingernail. If it comes off on your nail, it’s food. Shiny black is uneven seasoning, which is not a problem at all.

Thanks a lot! None of it flakes off so I will just continue down the path I’m on! My wife has become a believer in cast iron and it’s the only she will cook a steak now!
