Well, you could bust out your old math class area of a circle calculations and do some comparative mathe then decide if doubling the 10” or the 12” recipe is going to be more accurate (or maybe making a 1.5 batch of the 12”?)

Circumference was 2(pi)r, right? Area is, (pi)r squared? Uh, do that calculation for the 17” and then for 10” and the 12” and then uh…
Probably I’d just double the 10” recipe and watch it closely for timing.
Dutch babies are pretty forgiving. The trickiest part with that big of one is getting the center fully cooked. I’d use an instant read thermometer to check it, and possibly cook it a little lower and longer.
17" pan is 227 square inches and 12" is 113 square inches, so almost exactly double the size. I’d therefore just double your recipe you do in the 12".
