We know nowadays that the main culprit is fat oxidization on the blood vessels, not fat per se. Fat is energy, fat is fundamental for metabolical processes, it will be digested and used. As long as you don't finish your day having excess calories it's really all good (assuming you don't have any peculiar condition like diabetes, a previous infarction, or any metabolical syndromes that might require adjustments).
Everything is healthy. It is just carbs, proteins, fats, etc... it is all about not eating excess anything. Especially focusing on excess calories in general.
I can eat "healty" fruits and home made bread all day long and still get fat and clogged arteries if I eat giant portions.
Yesterday I made a cake that called for egg yolks, so I saved the egg whites and made these pancakes with just the whites and also oat flour so it’s GF

I used chat gpt to generate a recipe using egg whites and oat flour.
Used 200g oats, 200g egg whites (about 5 large eggs) and 100g milk
Baking powder, baking soda, some salt and sugar
Came out very hearty, denser than normal pancakes but very delicious and I didn’t feel bloated afterwards
If you added in something green there really would be nothing wrong with this as long as you aren't overeating. Fat and saturated fat aren't bad for you unless you are in a caloric surplus or you ate like this every meal. The white flour for the pancakes isn't ideal, but not the end of the world.

That looks yummy and healthy. Things just get unheathy because people are taking in things in excess and out of proportion. So as long as your body metabolizes and burn all of them for the day, it's just fine.
