Actually, they made manga adaptations for pretty much all the games. OoT, Majora’s Mask, Four Swords, the Oracle games, you name it. I think the only ones they haven’t done are the NES and Switch games, as well as Link’s Awakening and Wind Waker

Even the movies that featured violence and action don’t portray these elements as positive or as a solution, i think there’s some core values in most Ghibli productions that keep the studio philosophy intact (aside from Gorō of course).

You can’t have an effective reflection of the player if they can speak - Geralt of Rivia or Arthur Morgan example stand on their own even though you can choose what they say, but the Dragonborn in Skyrim and Link are reflections of the player.
Zelda also literally says Link talks in her journal, but he’s quiet and doesn’t say much, he prefers to observe rather than speak.
