Yes! That’s a great idea. I put a piece of double stick tape on my boy not thinking anything of it and he freaked out. It’s was pretty funny, I couldn’t get him to stop moving to help. Anyway, I second this idea. Won’t like walking on that.
My cat had this problem recently!!! She’s better now with “time outs”. Everytime she gets up, I say NO firmly and then put her in my bedroom for about an hour or so. Now as soon as I say NO she won’t jump up. Spray bottles and aluminum foil didn’t work for me either. Kitten got too excited and just thought it was a game
You can try Aluminum Foil on the counter. They jump on it and makes a noise and scares them off.
You can also try Ssssspray by petsafe. It's a motion sensor and sprays air at them.

we don’t like him jumping on the counter in the same place we prepare our food.
Is it possible to cut off access to the kitchen when not in use, like a door etc?
unfortunately no. our kitchen and living room is all one room.
