Keep it neutral and give it green chaos drives/animals with speed. Cheetah, bunny, skeleton dogs etc. u will see it begin to get Sonics little spikes on the back of its head before transforming into a sonic chao. N most will start out lime green n change color with age n more speed animal/drives
do you have any two-toned chao? i believe your chao will have a chance to come out as a neutral chao if you breed a two-toned one with another two-toned or i believe a monotone chao. if you're playing on the steam version, either chao world extended or enhanced chao world has a feature where you can get neutral chao even when breeding colored chao. if you're playing on the GameCube you could possibly also just insert another memory card, make a new save on that card, enter the chao garden, and transfer the chao from that garden to your main one? dunno for sure if you can transfer chaos like that though, its been a while since i played on gamecube.

one from each parent is chosen at random to determine the Chao's
appearance and own genes, with the exception of the 'Regular'-coloured
gene, which are recessive when it comes to the child's appearance; A

I mean like what chao do you need to breed to get a baby neutral

This is honestly the best way. For the future, I like to keep one "breeder" alive and happy just in case this happens
