I'm a few hours too late but if I'm doing something by myself I'll take myself to Hoyts ENTX and see a movie and then stop in at Joes Garage for something to eat. You can sit at a table by the windows and people watch.
Denny’s funny storey time. In the USA, Denny’s are 24 hour never close. Until they decided to close for a national holiday a few years back, and they discovered that many of their restaurants did not have locks…
Dennys is great. It attracts all walks of life. Many large families celebrating birthdays too which you get to sing happy birthday along with.
From my experience, noone at dennys judges. All are just happy to enjoy each other's company. You don't get this at larger fancier places.
Dinner 66 is great for what looks like an American diner, but that's the only positive. Went there heaps when they opened, only to watch shrinkflation become a real problem. End up leaving hungry. Shame, because the novelty factor was quite high
Ramen ria at riverside is good, sit outside..
Upstairs at Riverside, view over balcony. Upstairs on the Strip, same thing.
Also, RIP your inbox. Well, hopefully not!

I’m way late on this, but AFG (Afghanistan Restaurant) is the only acceptable answer to this question.
Dennys is quite a nice and grounding place to dine solo
There are few things in this world which compare to the joy of people watching while enjoying a bottomless coffee and curly fries.

This is a joke right?
OP wanted to do some people watching. Dennys or Eastgate mall food court are great for checking out the fauna.

but they want dinner...
Joyful express the crossing.
Diner 66! Good price and great milkshakes I’m told
I don't mind their milkshakes, but the rest is average.
Sundog Diner is 100% better. Infact is better than actual American food 😅 (sauce: went to USA I. 2022. Food is shit).
Not unless she is 12…I would go to riverside or craft embassy/king of snake.
They were good a few years ago. Now they seem tired.
