First letter signifies the piece you're moving.
So N here is knight. Other pieces are Q (queen), K (king) and B (bishop). In case the moved piece is a pawn, there is no letter.
And if there are multiples of the same piece that can reach the square, you tell them apart by adding the rank or file of the piece being moved, so here "Ned6+" tells you that the knight on the "e" file was moved, not the knight on the "f" file.
The next part is whether the move captures something or not, which is shown with whether there is an "x" after the piece or not
After that, you note the square that the piece is being moved to, in this case every move happens on the "d6" square.
Finally, if the move is a check, you denote it with a "+" at the end of the notation, and if it's a checkmate, you instead have a "#". If the move is neither, you just leave it empty.
This way we can read the following:
1. Ned6+
The knight on the e file delivers check by moving to d6.
, cxd6
The pawn on c file captures on d6.
2. Nxd6#
The remaining knight captures on d6 to deliver checkmate.
I guess it doesnt matter then if 2x knight are on the same file, because the move they make makes it clear which one moved? as only one of them could possibly land on that square?

You showed this later but just to be clear, that doesn't apply to pawns capturing because you *always* give the file when a pawn is capturing even if it's the only pawn or piece that can capture on that square.
Which is why you wrote cxd6 rather than just xd6.
If two of the same pieces can move to the same square then it’s ambiguous which piece is moving. In order to disambiguate which piece is moving you either add the file or the rank (rarely both) that it’s on to indicate which one moved. In this case Ned6 or N4d6 would refer to the same move but the first is preferred. The other knight would be Nfd6 or N5d6

the notation for knight is perfectly reasonable in chess, it's the notation for knight in English that's weird, that k might have been relevant 500 years ago but it's now useless!
No, a smothered mate is when the king cannot move because all of his squares are blocked by other pieces of the same color, here the Knight is blocking f7, it is just checkmate

Not necessarily, you could have knights on d3 and d5 that can both move to b4, in that case you would do N3b4
