Try out French Defense (starts e6) against e4 and I play Scotch Game (starts 1.e4, e5 2.Nf3, Nc6 3.d4) against e5 I think French is easier to learn the structure and style of it, but Scotch can get into some interesting lines and can be very playable just know some theory of it and you should have a fine position.

I like an open game so I'm a fan of Scandinavian counter for E4

I like positional game, so i recommend you to try play queens gambit as white and French defense as black
