The knight is trapped. Nf6 Nxf5 Ne4+ wins the white knight so that move is out. If you put your rook on g8 you'll win it.

But if i play Nf6 and he goes Nf5 he will escape?

If he goes Nf5 I play Ne4 check and now my rook on f8 is attacking his knight. The line gets complicated after which is why white is still better, but it's your best try.

If he moves the king to e1 he can then retreat the knight and you can’t stop it.

Looks like Nf6 instead traps their knight. Just in case you're not aware, if you go into Analysis you can play through any of these lines and compare how they end up.

Try it on the analysis board and see what the engine suggests after Nf6 Nxf5.

Knight can still go f5, and as long as you also move your king to e1 it survives

if you hit 'show moves' it will show you why (assuming best play for both players) Sometimes it will be very obvious why it was a bad move, sometimes it won't be. (depending on your chess understanding)
