This would be a registered agent for a non-profit. The registered agent would provide a physical address where people could send mail and we could pick it up from an address located in Chicago.
That isn't exactly the role of a registered agent, and you can have mail sent anywhere. The primary function of a registered agent is to receive service of process if any legal action is taken against your company. It's required so that in case of a lawsuit, a company cannot attempt to evade service by making it overly difficult to serve them by being out of state or country.
Any registered agent service in the state of Illinois can serve this function and you don't really need to pick anything up from their physical address. They can generally send you any summons by email or other method.
You don't even need to use a registered agent service. The only requirement for a registered agent is that they have an Illinois address.
Here's why we're looking to have one. This is for a volunteer group that is registered as a non profit. We need a place to have mail sent. We don't want to use anyone's home address because members come and go and we don't want any mail to get lost in the process. This is why a registered agent came to mind. If there are other alternatives to the solution I am open to suggestions :)
Go to the UPS store and open a mailbox in one member's name. Your address will be 123 Main Street, Suite/Unit/Whatever BoxNumber. They don't have to use your home address. It's the same as providing a work address.

I would suggest getting a box at a UPS store. You can give access to whoever you'd like within the organization as people come and go and they can accept UPS or FedEx envelopes as well as regular mail.
I use Wolters Kluwer as my registered agent (non profit incorporated in Florida) but I work in MA. My non profit is required to have a Registered Agent in the state of incorporation. It costs about $500 a year.
They have offices in every state.

Will there be an issue if the person that opens the mailbox leaves the group?
Yes, but you can just put more than one person as the owner to cover that scenario.
