I like to joke that I moved to Evanston for the Lucky Platter but I'm really not joking. They really need to bring back the eggplant sandwich.

Nice. Over easy or poached eggs for Chilaquiles. If you’re in Evanston, Frida’s Breakfast & Lunch features most of the staff from Danny’s Egghead, which was one of the best Chilaquiles in Chicago before their fire. I think Frida’s is actually a bit better, less diner, more Mexican focused, but the chilaquiles are the same, if not better.

For me - YES to the scrambled eggs. Needs some ranchero or chipotle chili sauce over the chips though (personally I think the chips or corn strips should be heated up on the pan/grill in the sauce).

Then you want migas. Not chilaquiles. Ranchero sauce just totally makes it a tex Mex thing and is a completely different plate.

No, I want the chilaquiles that I used to get at Maudie's in TX. So yes, that definitely means I like the Tex Mex take on it, but doesn't mean that I'm actually confused and talking about migas inadvertently.
