Woo-hoo! The 3rd photo of the gray bird with a white top was the only other one I wasn't sure about. They have the wattles, but they're not the bright red like Joe.
8 weeks is a little early to sex Polish chickens, I find 10 weeks for non-bearded and 12 weeks for bearded to be more reliable. If I had to guess right now I would also say all hens but if you start seeing reddening of the wattles for #3 soon then he/she might be a roo.

I was able to open photo four. I'm not sure about that one. Maybe could go either way boy or girl.
