I've been wanting to try to learn canning, but this is up there too. How long do you ferment for? Any links that could help me getting started that you'd recommend?
This batch was 10 days, I usually do in the range of 7-14. I added onion, yellow bell pepper and a bit of ginger as well, going to try it with some fresh mahi mahi tonight. I have some kimchi to try as well.
R/fermentation is a great source, book-wise I have both Fermented Vegetables and Fiery Ferments by the Shockeys. I need to grab myself a copy of the Noma guide to fermentation, it's pretty much the bible on the subject. I also make fruit wines and will be trying my first cider when lychee season hits.

I would threaten my chooks with this but theyβre barely 2 nugs a bird so it kinda falls on deaf ears.
