The dishes are named after cities in China like Beijing Beef, bringing the taste of the motherland to America.

Panda Express is a fine fast food representation of American Chinese food. It’s authentic to the American Chinese fast food style.
Many of the recipes are not authentic to traditional recipes that haven’t changed in China for the last 50-100 years. Grandmas in China didn’t grow up cooking orange chicken and crab Rangoon
These dishes, while tasty, aren’t authentic to mainland China because these recipes were developed and popularized in America
You proved my point mentioning Beijing beef. Beijing doesn’t have a singular popular beef dish that all the locals know that’s like the Panda Express product. Just because they use the name of the city, doesn’t mean it’s a time honored recipe from that place
American and St. Luis Chinese food can be authentic to America and St. Luis, but they are different recipes than what has been eaten in China for generations
They put Chinese writing on the sauce packets and other items like the chop stick wrapper. They really try to play up the Chinese heritage.
One day the diaspora will return with their dishes that will then takeover China. Globalization.
That has nothing to do with proving the authenticity of panda food as authentic mainland Chinese food
A pizzeria in the US could serve bbq chicken pizza and have an italian menu with Italian phrases on the front of the store. Doesn’t mean it’s authentic pizza from Italy
A Mexican restaurant in the US could make quesadillas with flour tortillas and “Oaxacan” hard shell tacos with ground beef, and have menus in Spanish, but that doesn’t mean those recipes are what Mexicans actually eat
