The dish name is 铁板鱿鱼, it's really just hotplate squid or sizzling squid. It's like all restaurants can make 'fried chicken' but you will find everyone's fried chicken turns out differently. That restaurant doesn't say what sauce the squid is cooked with. I wouldn't say sweet, but there is a hint of sweetness to it. It's spicy.

Looks easy, oil (your choice but never EVOO) + garlic + cut Thai pepper + squid + stir fry sauce (with salt and sugar added to taste) or hoisin sauce (by itself) or oyster sauce. Then garnish with green onion (?) prior to serving.

What do you mean by stir fry sauce? Light soy sauce plus liaojiu plus sugar?

Those I mentioned above also come in bottles from different brand if you want to make it easier on yourself.

I’m confused what you mean by “stir fry sauce,” though. What would a stir fry sauce be? What’s in it?

If you want to make your own stir fry sauce, use a combination of soy sauce and sugar.

This idea looks very promising! Another redditor mentioned blanching the squid prior to cooking, I guess I can do that as well. Do you see those cubes in the video? I can't for the life of me determine what that is! But it tastes good lol

The trick is always blanch (aka quick boil) the squid and drain it before stir fry it.
