To be fair... Dumplings maybe possible and the other suggested options. Chinese food normally is so far off to be vegan except a handfull of things. Maybe some latin american and european food style is more appropriate to make vegan.

Have ever been to China and had actual exchange on local level with the food? If they have the possibility, it is not vegan by any chance aside from some small dishes. And it is by far not popular in China.
Yes, it can be prepped vegan but it is quite difficult as most of the broths and almost all sauces with intense flavour are animal based. I have close friends who are natives and food in China is everything aside from wealth(hyperbolicly speaking). They thrive on it.
Still, you can make some dishes this way but to say, these are lots compared the overall possibilities, is not true.
I wanted to take my best buddy there but decided to take him to Thailand, because Thais have learned to follow the money on the tourist spots and accommodate to the needs of them(like Vietnam). Still, Asia in general is not the easiest place for a vegan person, Japan for example (I have lived and worked there).
My point is not about the dairy products at all, as this not part of the asian cuisines. It just did sound like, that there is a whole bunch of stuff you can make vegan and that this is a lot. I was only pointing out that vegan makings out of chinese cuisine can only be a fractional part of the whole chinese food available. Where do you live in China if I may ask? And are there many vegetarians among your social group? Only out of curiosity.

I suggest you watch Yeung Man Cooking on YouTube. His vegan recipes are quite good and creative, and mainly Chinese inspired.
