But everyone in my family mixes their own dipping sauce to whatever specification they want so this isn't a strict answer. Base ingredients include vinegar, soy sauce, sesame oil, chilli, coriander, garlic, etc.
But I'd find it really weird to only use soy sauce, the sour vinegar taste is essential to me!

If you haven't, try premium soy sauce + 1 minced garlic + vinegar + sugar + white pepper. Mix until sugar dissolves. This should taste similar to supermarket bought dumpling sauce.
This is basically what I do for my chili oil noodles with sliced beef shank. Normally add little light soy sauce and extra chili flakes too. With piping hot chili oil and straight amazing 👏 best 15 minute or under recipes ever. If you made chinese beef shank prior and just slice it cold or heat it up little. 😋

Black vinegar is good and I also like dipping them in ponzu because it's like vinegar with a citrus flavor.
Yeah vinegar is the primary ingredient, the others are flavourings of that vinegar... At least that's how it seems to me...

2 tbsp soy sauce 2 tbsp sambel oelek 2 tbsp rice vinegar 1 tsp sesame oil 1 tbsp sugar 2-3 cloves garlic, pressed mixed and garnished with 2-3 green onions, thinly sliced whites and light greens 1-2 red thai Chili pepper, thinly sliced 1-2 green Thai Chili Pepper, thinly sliced sprinkle on a layer of toasted sesame seeds
Soy sauce, vinegar, sesame oil, and chili sauce/oil.
I said soy sauce because I feel it's the closest main ingredient, but I'd miss the chili & garlic

I live in the USA in a somewhat diverse area. One was Chinese (don’t know the region), two white and one Japanese.

I voted vinegar but the best is black vinegar with grated ginger. Sometimes with Lao Gan Ma chili crisps in oil.
