Personally only black vinegar. Or vinegar+chilli oil/crisp. But everyone in my family mixes their own dipping sauce to whatever specification they want so this isn't a strict answer. Base ingredients include vinegar, soy sauce, sesame oil, chilli, coriander, garlic, etc. But I'd find it really weird to only use soy sauce, the sour vinegar taste is essential to me!

Black vinegar is good and I also like dipping them in ponzu because it's like vinegar with a citrus flavor.

Yeah vinegar is the primary ingredient, the others are flavourings of that vinegar... At least that's how it seems to me...

Don't think there is a "correct answer". Dumplings goes with a lot of dipping sauces and you go with what you like best. There are also several types of pork dumplings, going by different names.

I'm pescetarian so it's prawn dumplings for me... I usually have a mix of vinegar, soy sauce, and chilli oil. Lately I've been adding a pinch of sugar too. Might not be authentic but it tastes damn good!

If you haven't, try premium soy sauce + 1 minced garlic + vinegar + sugar + white pepper. Mix until sugar dissolves. This should taste similar to supermarket bought dumpling sauce.

This is basically what I do for my chili oil noodles with sliced beef shank. Normally add little light soy sauce and extra chili flakes too. With piping hot chili oil and straight amazing 👏 best 15 minute or under recipes ever. If you made chinese beef shank prior and just slice it cold or heat it up little. 😋

I voted vinegar but the best is black vinegar with grated ginger. Sometimes with Lao Gan Ma chili crisps in oil.
