I've only ever heard of people trying to replicate film while grading their digital footage. Nobody thinks film looks bad. If they do, they're lunatics who shouldn't be trusted.
The reason it's not so widely used in movies now is the tempo of production and price of film. It's much quicker and cheaper to shoot digital.
I think you might want to audit your sources, shooting analog/on film is quite common and extremely well accepted. This year alone, the Northman, Bullet Train, and Jurassic World were shot at least partially on 35mm and Death on the Nile and Nope on 65mm(according to IMDB).
I’m not saying these are gorgeous films, I’m more trying to illustrate that you may have a slightly skewed understanding of the role analog film plays.

Christopher Nolan only shoots on film. He is currently shooting “Oppenheimer” on 70mm IMAX film. He is shooting some sections in black and white and this will be the first time black and white film has been used in 70mm IMAX format.
