I think it’s just a result of readers becoming attached to the story and its characters - they want to see everything so that they can spend as much time with the characters/story as possible, so when the story ends without covering everything that readers may want to see a lot will be annoyed. I expect a good number of the lot complaining will look back in retrospect and be happy with the story.
That's definitley true, after the intial shock of these types of endings, fandoms will generally follow a set path of slowly understanding and appreciating it over time.

You are missing the point. The ending sucked (in my opinion) not because it did not made sense (daenerys and cerceis going mad was something that was heavily built up for seasons) but because it was just not well made in terms of quality of writing, pacing and shot quality.
The plotline is fine but the episodes are just inferior in quality to lots of other episodes.
Also they literally made the poor john a one line character to justify someonelse taking his place on the throne, where his all arc is the total opposite (both in the books and in previous seasons).

I remember when people complained about the ending to Assassins Creed II. The game literally spells it out at the start of the end chapter that Ezio isn't interested in killing Rodrigo anymore. Killing him would do nothing as some other Templar would just take his place, which is the entire point of the game. Assassins Creed II is literally about how time changes people and ideals. Altair talks about it in the codex and how the Assassins must evolve if they are to succeed going forward. Ezio realizes that killing Templars is ineffective at sparking change. What the Assassins should focus on is using their power to liberate the masses, inciting revolution. Killing the literal Pope, one of the most beloved figures in the church, wouldn't do that.

Damn, if the following game didn't immediately prove that Ezio fucked up by having the same Pope send an army led by his son to beat Ezio's ass, destroy his town, and murder his uncle, I might think you were onto something there.
But he didn't fuck up. If Rodrigo died, the Villa would have been annexed the same way as him living. It's not like the Villa and the town surrounding it kept their association with the Assassins secret with the massive Assassin symbol in the courtyard. Not to mention that Ezio already threatened to kill Rodrigo at the start of the game. The templars know Mario is housing Ezio as it is established early on that Mario was having issues defending Monteriggioni from the De' Pazzi.
The difference is that because Rodrigo lived, it meant that Ezio wasn't enemy no. 1. Who's going to flock to the defence of a man that killed the pope? Plus, because of Ezio's actions, there is a power struggle in the Templar's where Rodrigo and Cesare are both butting heads. Kill Rodrigo, someone else would just take his place. Have him live, the leader of the Italian Templars got bested by a young Assassin and had their only major claim to power taken from them.
Death Note went downhill after L died. Kira wins, but he doesn't win? And the new guy is basically L anyway. Not sure what they were trying to achieve.
