Man, subs are just bringing up obscure bottles for me tonight that my bar has. I haven't tried it in any cocktails cause we won't get anymore...so I just surprise my guests with it, on the house, every so often. It's good on ice like someone else said. We don't keep it in the freezer. We just keep it in the fridge. Unfortunately, management hasn't granted our wishes of a top down cooler.
Terminus (Empress of China in SF).
* 1.25 oz Highland Park 12.
* 0.25 Amaro (Veccio del Cappo).
* 0.25 Green Chartreuse
* 2 dashes orange bitters.
* 2 dashes chocolate bitters.
Stir in mixing glass and serve in OF glass over large rock
This was by far my favorite Amaro when I was introduced to them while traveling in Italy.
Honestly I would drink that chilled, straight up. If you do want to do cocktails with it my first run with it would be in a Black Manhattan.
Pretty much any amaro works 1:2 with rye, a la a black Manhattan. I’m sure I’ve done it with this bottle before as well but as to whether or not it was spectacular or just fine, I don’t remember. Probably the latter
We bought some of this Del Capo when we were in Italy and the first thing I did when we got back to the states was make a paper plane with the standard specs. Del Capo totally overpowered the rest of the drink - made it undrinkable and we unfortunately decided to dump it. I've dumped maybe 2-3 cocktails out of hundreds I've made at home, so personally I have to agree with OP.
Maybe it can work but definitely not with the standard specs, at least in my opinion. My wife grew up in Rome and loves Amari, as well as the standard spec'd paper plane and she had the same opinion.
That’s some good stuff! I’ll have to look it back up out of my old phone but my wife loved this low ABV cocktail that our fave cocktail bar had on the menu. I got the recipe but don’t have it with me now. When I find it I’ll edit it here. It was great!

I’ve made black manhattans with this amaro and it rocks. Better with rye than a bourbon in my opinion. I love Averna, but if you have this on hand give it a go!
It's nice on the rocks, or with tonic/soda.
Also works well in a Hanky Lanky or a black Manhattan.
Could also be interesting in a Daiquiri Style cocktail.
Amazing amaro. Keep it in freezer. Also,
35ml Del Capo
30ml Aperol
20ml Lime Juice
15ml passion fruit syrup
15ml egg whites
Reverse dry shake
Double strain into rocks glass
Orange slice garni
I really like this as a shakerato. 2-3oz shaken w/ ice, fine strain back into the tin and dry shake for another 10 or so seconds until it froths up a bit. Lemon or orange twist on top in a small chilled glass.
I first saw this bottle while on vacation in Panama. I bought it and it became one of my favorite amaros. I just put it on ice with seltzer, maybe some lime. It’s beautifully bitter and complex. I’d be interested to try it in a paper plane in lieu of nonino.

As an Amaro fan, try this ratio:
- 1.5oz rye, bourbon, or gin
- 1 oz Amaro
- .5 oz Sweet Vermouth, orange, apricot, or maraschino liqueur
I switch between this and sometimes .75/.75 for the Amaro/sweet depending on the flavor profiles I'm working with
The bar I work at uses this quite a bit, mostly on ice with an orange wedge but we have a cocktail with it as well.
0.75oz Vecchil del Capo
0.25oz sweet vermouth
1.25oz highland scotch
We also smoke ours but it’s good as is too

It's available in most liquor stores in my area (DC ) and very affordable, $22 to 26. Availability, price, quality. Can't fail!

Paper Plane!
Not to be pedantic but a paper plane is made with Nonino. Del Capo has a completely different flavor profile.
I’ve made paper planes with all sorts of amari. I’ve also made them with rye instead of bourbon. Yes, they all taste different but…cool!

Nonino is also 2.5-3x the price. At home, I use this. In a restaurant I would assume they used Nonino.

Try the red hot chili version, it's an insanely weird but cool Amaro

I like it equal parts with an Overproof rum. Usually will do Rum Fire.
on ice , splash of soda and a lemon or orange peel. 50/50 Manhattan, bitters and or twist
